BCC Staff

One of the best things that come off a grill is juicy pork ribs - tender and slathered withy sauce with the meat falling off the bone - oooowee, that's some good eatin'. Where's the best place to find ribs cooked just right? At the ninth annual Wild Hog Explosion, slated for Saturday March 19, at Mansfield Park on Highway 16 North.
Each year, the "git 'er done" Wild Hog Explosion features a wild hog catch, arts and crafts, all-bike rally and a cook-off, sanctioned by the Central Texas Barbecue Association, where some of the best cookers in the Lone Star State will compete for Grand Champion.
Those who think they can "git 'er done with grill, meat and sauce are invited to participate in this always fun cook-off. All proceeds from the Wild Hog Explosion benefit the Bandera County Public Library.
All CTBA rules apply at this sanctioned cook-off. Each cooking team must have a chief cook and at least three assistants. Cooking teams will be judged for Best Chicken, Best Pork Ribs and Best Brisket. Additional competitions include Best Beans, Best Theme, People's Choice and Most Unique Pit. In addition, the last competition of the day is for the Best Margarita.
Don't miss this great opportunity to win a great trophy designed by local artist Ester Benedict and gain the bragging rights for a year. Cash prizes will be awarded for first place in meat categories only. Dr. Margo Denke is sponsoring this year's barbecue cook-off.
New this year is a fun jackpot competition being sponsored by Diamond H Quail Farm.
